Another week another trip to TnT Supermarket. Tonight was hot pot and about 5 pounds of various meat products for three people and two dogs. This is the third time I made my own broth for the Hot Pot.
Recipe.
Large pot (the bigger the better since during the hot pot you will need to add the broth throughout the meal)
First I like to saute my garlic, onions, and shallots first with a bit of oil then once they brown a bit then add the stock bones.
Depending on your choice you can go pork, beef, or poultry. Gennerally I go with a mix of pork and chicken bones since my wife doesn't like to eat beef.
Once the bones are caramalized then add the water and various spices.
This time I went with with pepercorns, star anise, and gogi berries
To top it off even more and add a little more kick to it I added some Ginseng roots to it.
I keep the salt to a minimum since your sauces will have enought of it. The broth I go with the idea that it should give food some flavour but not fully overpower the items you put into the broth to cook with.
