Alright Curry Chicken

Tonight is curry chicken night. Well actually it will be cooked tonight and eaten tomorrow. Curry is always better the next day. The dark meat I find is always better tasting and leaving the meat on the bone while cooking always makes things taste better.

A couple of little tricks I have learned from my wifey. Brown the meat a bit first then put it aside. In the same pan brown the vegetables you want to use then the curry sauce after. You could cook up the coconut milk first to give it more flavour. Either way browning the meat will make it keep it shape better as it stews in the sauce.
